Pablo Eggs-Go-Bar is the hip new breakfast spot in Mellville and we loved the amazing decor, with its indoor plants, quirky features and colourful walls. The name is what first drew our attention and we loved hearing the story behind it! So, we asked the guys at this trendy Joburg spot to tell us more about their unique hangout.
All about the name
One day, about two years ago, I was hanging out with a good friend and creative genius, Paul Moneta and who I’d actually worked for at Fuel Bar in Newtown a few years ago. He’s owned some awesome venues like Mo’s and Refuel and I was talking to him about the amount of eggs I’d go through in a week at home and he made a joke about ‘dealing eggs’ like ‘Pablo Eggs Go Bar’. It immediately struck a chord with me! Even though the menus and concepts I’d been thinking about for years had more than just breakfast fare, it became all about the breakfast and brunch experience!
The first sketch of the logo looked like something out of a fast-food induced, sugar-rush episode, featuring a red eyed, rather malnourished rooster figure. Once that was out of my system, another good friend and personal inspirer, Carolina Rasenti, owner of The Great Eastern Food Bar introduced me to Pinterest. A world of design success stories was now at my finger tips to explore. I could instantly see if my ideas could work in a real world environment. I wanted to create a space that would make our customers feel like they’d been transported to another space and time. The Art Deco and geometric theme resonated with me – 1950’s Havanna, with candy colours and raw materials. I soon realised that I would need a much larger budget to get to the place I wanted to go, but every day we take one step closer to that special time.
What’s been a highlight since opening?
The highlight for us has to be the people and the warm welcome we’ve received from the Melville Residents and all our customers! From day one, Pablo’s has been pumping and we’re so grateful and we feel so blessed. We strive to keep the standard high and reach for new heights every week.
The Red Shakshuka is definitely our most popular dish. Served with Yemeni flat bread and our homemade hummus and Israeli salad, it’s a must try dish!
We are open seven days a week! Find us at 2 7th Street, Melville, Johannesburg on Mondays from 06:30 to 12:00 and from Tuesdays to Saturdays we’re open from 06:30 to 16:00. Visit us on Sundays between 06:30 and 15:00.
