Herby Polenta Fries

Everyone loves good old French fries. It’s an all time favourite that’s been around for centuries. Crispy and golden straight from the fryer, drenched with sea salt and maybe a lashing of vinegar. Enjoyed with ketchup or mayonnaise, there really is nothing better…

Until, you try these delicious polenta fries. They’re golden and crispy on the outside with a silky smooth center. Packed with herb and Parmesan flavours, it really is a great alternative to potato chips. Serve these hot with herby mayonnaise or tomato ketchup. They make a delicious side dish, but are just as great as a crunchy snack with drinks.


2 cups (500ml) vegetable or chicken stock
1 cup (250ml) polenta
50g butter
3 Tbsp (45ml) Parmesan, grated
1 Tbsp (15ml) parsley, chopped
1 Tbsp (15ml) chives, chopped
1 Tbsp (15ml) basil chopped
Squeeze of lemon juice
Salt and freshly ground pepper
Flour for dusting
Vegetable oil for deep frying


1. Place stock in a saucepan and bring to boil. Add polenta in a steady stream, stirring continuously using a whisk.
2.Reduce heat to low, stirring frequently for about 30 minutes until thick and creamy.
3. Add butter, Parmesan, herbs and lemon juice and season with salt and pepper.
4. Pour polenta into a greased baking dish and leave to set in fridge overnight.
5. Slice into finger length size chips and lightly dust with flour.
6. Deep fry until crispy and golden in colour.
7. Season with a little more salt and serve immediately with a French style mayonnaise.
