When I’m out for dinner and there’s pork belly on the menu, I’ll probably end up ordering it. Although it’s traditionally a very fatty cut of meat, it can be one of the most rewarding cuts to eat: tender like a cloud, filled with flavours from heaven.
We’ve had such a long and hot summer, but the season is starting to change. The air is getting just a little nippier every day and the sun is rising a little later. And I somehow always think that once summer is over that we won’t be able to entertain friends outside anymore.
Asparagus is such a strange and wonderful vegetable, but I don’t eat it too often. I like to keep it for special occasions, where I would wrap it in bacon and cook it on the grill, or blanch it for 30 seconds in simmering water and then drizzle it with buttery hollandaise sauce. It’s my “treat” vegetable, if you know what I mean.
It’s such a cliché to say the year flew past, but seriously . . . feels like I’ve been on fast forward since June. I’ll be spending Christmas with my family in Newcastle and will be back for the new year in Langebaan. We’re thinking of hosting a new years gathering with a few friends, which I’m extremely excited about. I want to create an exciting celebratory feel, without going over-the-top or having to much waste.
My brother-in-law, Gerhard Compion, is the trout farmer on Lourensford Estate. I recently got involved in the family business by doing some marketing and distribution for his company, Lourensford Trout. If you don’t know what rainbow trout is, it is a fresh-water fish with beautifully pink flesh – very much the same taste and look as salmon.

One of the very hot new trends on the food scene is tapas-style eating. And may I say: it is my favourite way to feast! Sharing platters full of snacks, dips, bruschettas and bites with friends around a big table is such a fantastic way to celebrate.
